5-Ingredient Pumpkin and Gouda Pizza
Say goodbye to takeout and dive into the flavors of fall with this 5-Ingredient Pumpkin and Gouda Pizza. This cozy autumn pie, perfectly crafted on an Atlas Steel Co. Pizza Steel, brings together the warmth of creamy pumpkin, the richness of gouda cheese, and the aromatic blend of caramelized onions and garlic. Prepare for a pizza night like no other!
- 2 Tbsp. extra-virgin olive oil
- 1 large yellow onion, peeled and thinly sliced
- 3 garlic cloves, minced
- ¼ to ½ tsp. crushed red pepper flakes (optional)
- ½ tsp. kosher salt
- 16 oz. fresh pizza dough, room temperature
- ¾ cup canned pumpkin puree
- 5 oz. freshly grated gouda cheese (about 1 ¼ cups)
Optional: finely chopped fresh parsley for garnish
Caramelize Onions: Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until soft (about 8 minutes).
Reduce heat to medium-low and continue to cook onions until they turn blonde-colored (15 to 20 minutes). During the final 5 minutes, stir in garlic, salt, and red pepper flakes (if using).
Prepare Pizza: Place a rack in the center-top position of your oven and preheat it to 475°F. Place your Atlas Steel Co. Pizza Steel on the rack.
Place the pizza dough on a floured work surface and stretch/roll it out to a 12" round. Pierce it a few times with a fork to prevent bubbling.
Spread the pumpkin puree evenly over the dough, leaving about ½ inch at the border. Scatter the caramelized onion and garlic mixture evenly over the pumpkin, and top it evenly with the gouda cheese.
Place the dough on the preheated pizza steel and bake for 12 to 15 minutes, or until the bottom of the crust is crisp and the cheese is melted.
If desired, garnish with fresh chopped parsley before slicing into 8 delicious pieces.
