When life gives you lemons, toss em on a pizza. Alright, I'll admit lemon might not be the first thing that comes to mind when you think of pizza, but this is just one of those things that you have to try for yourself.
Think of this pizza like an elevated flatbread. There’s no sauce, no meat, and it's not complicated, but the flavour is layered, herby, and bright. Thanks to a lemony-garlic brine poured directly onto the dough, every bite feels light but satisfying.
Topped with a mix of mozzarella, parmesan, and black pepper, this one’s perfect for summer nights, casual dinners, or just switching things up.
Why Lemon Works on Pizza?
You’ll often find lemon used in coastal Italian cooking and at restaurants... but why? The brightness of citrus cuts through the richness of cheese and olive oil, adding balance and depth without overpowering the other ingredients. It’s the same reason you'd add a squeeze of lemon to grilled veggies or fish, it sharpens and strengthens the whole dish.
Ingredients:
Brine:

2 tbsp extra virgin olive oil

1 tbsp water

1 tbsp fresh parsley, chopped

1 small garlic clove, grated

1 tsp lemon zest
-
1 tsp lemon juice
-
¼ tsp fine salt
-
¼ tsp black pepper
Toppings:

5 oz fresh or shredded firm mozzarella

1 tbsp lemon juice (for finishing)

Two lemons (one for juicing, another for slicing)

2 tbsp grated parmesan cheese
-
1 tbsp fresh parsley
-
Freshly ground black pepper
Tip:
This pizza works best with our cold-fermented dough for a chewier base and deeper flavour. The lemon brine gives it a fresh, slightly tangy flavour. We used The Pro steel for that signature crispy bottom and fluffy crust.

Instructions

In a glass jar or lidded container, shake all brine ingredients until well mixed.

Stretch your pizza dough and dimple the surface with your fingertips.

Pour the brine over the dough, letting it settle into the dimples.

Add mozzarella and place thinly sliced lemon on top.

Bake on your pizza steel at 530 degrees until golden and bubbling (approx 5 mins).

After baking, drizzle with lemon juice and sprinkle on parmesan, parsley, and pepper.

Slice and serve!
